Peanut Butter Apple Bake

When the weather starts to cool down there is nothing more enjoyable than a bowl of oatmeal in the morning to warm you up. Lately, I've been enjoying making oatmeal bakes because I can make a big pan and have it for breakfast the entire week! So when my friend Gracie, from the Hungry Blonde wellness blog, posted this recipe I knew I had to try it. This is not only the perfect blend of peanut butter, apples, and cinnamon, but it is super easy to make. I didn't even have to go to the store for any of the ingredients!

  • 1½ cups chopped apples (I also sliced some extra for the top)
  • 1½ cups regular oats
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 3/4 cup milk of choice (I used whole milk)
  • 4 tablespoon melted butter
  • 1 egg
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon

  1. Preheat oven to 375. Grease a 8x8 or loaf sized baking dish and set aside.
  2. Combine all ingredients in a glass bowl and mix thoroughly.
  3. Spoon the oatmeal mixture into the greased baking dish and bake for 25 minutes.

The options are really endless with this breakfast bake! The original recipe called for almond milk (for all you dairy free ladies out there!) I only had regular milk in my fridge and it worked great. Next time, I'm going to try blueberries instead of apples!
